What Is White Pizza?
White pizza (or pizza bianca) is any pizza made without tomato sauce. It’s traditionally topped with olive oil, garlic, and cheese, but many people like to top their white pizzas with an alfredo-like sauce. Others like to mix garlic, olive oil, and butter together for a sauce, and some like to go completely sauceless.
For my favorite white pizza, the crust is smothered with a salty, flavorful, roasted garlic butter before being topped by an array of cheeses. I also add some very thinly sliced sweet onions to my pizza, but they are completely optional!
White Pizza Ingredient Notes
Pizza dough: I use my very favorite homemade pizza dough, which can be made and baked the same day. You can use store-bought crust but, in my opinion, none of them can compete with the flavor and texture of homemade pizza dough!
Roasted garlic: This is the key to the lovely mellow garlic flavor in the butter that is brushed all over the pizza. It will take about 45 minutes to roast garlic before you can add it to the butter, but the good news is the process of roasting garlic requires pretty minimal effort. You can read how to roast garlic in your oven here.
You can easily roast garlic ahead of time and store it in an airtight container in the fridge, making it easy to quickly grab and add to soups, pastas, or the butter for this white pizza.
If you don’t have roasted garlic on hand and don’t want to wait 45 minutes for it to roast in the oven… use a couple cloves of fresh pressed garlic and/or add extra garlic powder until the butter is garlicky enough for your taste!
Butter: I use one stick of salted butter, melted.
White Pizza Mojo: I add White Pizza Mojo Seasoning (shop on Amazon) to the garlic butter, along with some parmesan cheese and extra garlic powder. White Pizza Mojo is a salty, garlicky, Italian blend of seasonings that is SO yummy. I use it in this garlic bread, these pull-apart biscuit bites, and a ton of other recipes.
If you don’t have this specific seasoning in your cupboard, add a bit of extra garlic powder and parmesan in its place.
Parmesan cheese: Good ol’ Kraft parmesan will work just fine in the garlic butter, but feel free to grate some fresh parm if you’d like.
Onion: I add a tiny bit of very thinly sliced sweet onion to the pizza before topping it with cheese. If you’re not an onion fan, feel free to skip this step!
Cheese to top the pizza: A shredded provolone and mozzarella blend, mozzarella pearls, and some crumbled queso fresco top the white pizza. While the shredded cheese turns gooey and melty, the queso fresco and mozzarella pearls keep their form a bit more when baked. This means you get both gooey and slightly chewy cheese in every bite—yum!
If you don’t have (or don’t particularly care for) any of the cheeses I use, feel free to sub in your own favorite varieties.
Tips For Baking the Pizza
I use a pizza stone (like this one on Amazon) to bake the pizza in our home oven. Make sure you preheat the stone for about 45 minutes before you bake the pizza to ensure it gets extra hot!
If you don’t have a pizza stone, bake the pizza on a half sheet pan. I recommend using a non-ridged light sheet pan, like this one from Nordic Ware (shop on Amazon)—which I love! A dark pan may become too hot, and I wouldn’t recommend using any type of coated pan at the high heat necessary to bake pizza.
You can bake your pizza on the sheet pan as you would any other baked good, or you can treat the sheet pan like a mock pizza stone. Place your sheet pan rim-side down on the middle rack of your oven and allow it to preheat. Then, use your pizza peel to add and remove your pizza to the pan. The results may not exactly mimic that of a dedicated pizza stone, but it will do!
If you have issues with your pizzas sticking to your peel or stone, try baking them on parchment paper. These pre-cut parchment sheets work so well for this. They never roll and can withstand heat up to 450 degrees, although we have baked pizzas at 475 degrees with no issues.
This may sound obvious, but make sure you use parchment paper NOT wax paper (which would be a total disaster). Some people confuse the two. Also, make sure you check your parchment’s heat rating. Some parchment sheets are rated up to 450 degrees, some only to 425 degrees (or less)—just take a look before you put them in the hot oven.
This white pizza also does very well when baked in an outdoor pizza oven, like this Bertello one that we use and love (review coming soon!!). My only recommendation is to not pile the cheese too high—otherwise, it may hit the top of the opening of the oven or the mozzarella pearls may roll off and burn.
Extra Notes
- As I mentioned earlier—these parchment sheets on Amazon are very helpful if you have issues with your pizzas sticking. You’ll still get a nice crispy crust, but without the hassle of dough sticking to your stone or peel. If you don’t want to use parchment, try coating the bottoms of your pizzas with semolina flour instead.
- Not to state the obvious, but this pizza is very customizable. If you don’t have shredded provolone and mozzarella, just use one or the other (or another one of your favorite cheeses). Add some extra sliced onion if you’d like, or leave it completely off—it’s up to you!
- This recipe will make 1 white pizza (10″). This is what a quarter batch of my homemade pizza dough yields. I like to make a couple different types of pizza when having pizza night, like one or two white pizzas, a BBQ chicken pizza, and/or a mushroom pizza.

Easy Roasted Garlic Butter White Pizza

Ingredients
- ¼ batch of my homemade pizza dough recipe here; each batch makes 4 pizzas (10")
Roasted Garlic Butter (See Note 1 Below)
- ½ cup salted butter
- 2-3 heads roasted garlic
- ½ tsp White Pizza Mojo Seasoning
- 2 tbsp parmesan cheese
- ¼ tsp garlic powder optional
Toppings For 1 Pizza (10")
- 2-3 tbsp roasted garlic butter
- 2-3 tsp thinly sliced sweet onion or to taste; optional
- ¼ cup shredded provolone and mozzarella blend
- ¼ cup crumbled queso fresco
- ⅓ cup mozzarella pearls
- 1 pinch dry basil
- 1 pinch dry oregano
Instructions
Prep your dough and roasted garlic, and preheat your pizza stone.
- Make sure your homemade dough is prepped, proofed, and ready to use! You can read my homemade pizza dough recipe here (it can be made the same day you bake the pizzas).
- Also, make sure you have roasted garlic ready to use. Read how to roast garlic in your oven here. It will take about 45 minutes to roast the garlic before starting this pizza. If you will not be using roasted garlic, sub in a couple cloves of fresh pressed garlic and/or additional garlic powder.
- At least 45 minutes before you plan on baking the pizzas, begin preheating your pizza stone at 475°.
Assemble Your White Pizza
- Make your garlic butter. Add the melted salted butter, roasted garlic cloves, White Pizza Mojo Seasoning, parmesan, and garlic powder to a small bowl. Stir until combined, lightly mashing the roasted garlic against the side of your bowl with the back of your spoon.½ cup salted butter, 2-3 heads roasted garlic, ½ tsp White Pizza Mojo Seasoning, 2 tbsp parmesan cheese, ¼ tsp garlic powder
- Form your pizza. If you are using my homemade pizza dough (or most other homemade doughs), do not roll the dough out! Instead, lightly press and stretch the dough into a 10" circle using your fingertips, starting at the center and working your way outward. Leave a slightly thicker border for your crust. Place the dough onto your pizza peel, either on top of a sheet of parchment or on a sprinkling of semolina flour (to prevent sticking).¼ batch of my homemade pizza dough
- Using a pastry brush, spread 2-3 tbsp of your garlic butter across the entire surface of your pizza. Then, sprinkle on about 2-3 tsp of the thinly sliced sweet onion (optional).2-3 tsp thinly sliced sweet onion, 2-3 tbsp roasted garlic butter
- Add the cheese, starting with about ¼ cup shredded mozzarella and provolone, followed by ¼ cup crumbled queso fresco. Top the pizza off with about ⅓ cup of small mozzarella pearls.¼ cup shredded provolone and mozzarella blend, ¼ cup crumbled queso fresco, ⅓ cup mozzarella pearls
- Sprinkle a pinch of dry basil and a pinch of dry oregano over the entire pizza, pinching the herbs between your fingers to break them down into even finer tiny pieces. Then, brush the edges of your pizza with additional garlic butter, which will add flavor and help the crust turn golden brown as it bakes.1 pinch dry basil, 1 pinch dry oregano
Bake Your Pizza
- At this point, your pizza stone should have been preheating for at least 45 minutes. Bake each pizza for approximately 9-11 minutes at 475°, or until the crust is golden and the cheese is melted and just starting to brown on top.
- Serve the pizzas right away. Drizzle them with balsamic vinegar, add a bit of truffle oil, dip pieces in marinara sauce, or enjoy the white pizza all by itself.
